After you have beaten The Mines of Moria you have to option to replay in story mode or free play. Choose to play story mode again and after a minute or two or playtime pause the choose "Quit to Middle Earth" select save and continue. This will get you the trophy without having to actually play the whole level and finish in under 15 minutes. This will also work for the Trophy for finishing a level in co-op.
